Ingredients:
- 3 medium (approx. 1.5 lbs / 680g) Granny Smith apples, peeled and diced
- 2 tbsp (25g) granulated sugar
- 1 tsp (2g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/2 cup (120g) sour cream, full fat
- 2 cups (250g) all-purpose flour
- 1 tsp (4g) baking powder
- 1/2 tsp (1g) baking soda
- 1/2 tsp (3g) salt
- 1/2 cup (120ml) whole milk
- 1/2 cup (65g) all-purpose flour
- 1/2 cup (100g) light brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 4 tbsp (55g) cold unsalted butter, cubed
Instructions:
- Toss diced apples with 25g granulated sugar, 2g cinnamon, and lemon juice. Let sit for 10 minutes.
- Cream softened butter and 200g granulated sugar together until pale and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together 250g flour, baking powder, baking soda, and salt.
- Alternately add the dry ingredients and the milk/sour cream mixture to the butter mixture, starting and ending with the flour. Mix until just combined.
- Combine 65g flour, 100g brown sugar, and 2g cinnamon in a small bowl. Work cold butter into the mixture using a pastry cutter or forks until crumbly.
- Layer a portion of the batter in a prepared 9-inch square pan, add the apple mixture, top with the remaining batter, and sprinkle with the streusel.
- Bake for 35 minutes or until a toothpick comes out clean.
