Ingredients:

  • 3 medium (approx. 1.5 lbs / 680g) Granny Smith apples, peeled and diced
  • 2 tbsp (25g) granulated sugar
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (120g) sour cream, full fat
  • 2 cups (250g) all-purpose flour
  • 1 tsp (4g) baking powder
  • 1/2 tsp (1g) baking soda
  • 1/2 tsp (3g) salt
  • 1/2 cup (120ml) whole milk
  • 1/2 cup (65g) all-purpose flour
  • 1/2 cup (100g) light brown sugar, packed
  • 1 tsp (2g) ground cinnamon
  • 4 tbsp (55g) cold unsalted butter, cubed

Instructions:

  1. Toss diced apples with 25g granulated sugar, 2g cinnamon, and lemon juice. Let sit for 10 minutes.
  2. Cream softened butter and 200g granulated sugar together until pale and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  3. In a separate bowl, whisk together 250g flour, baking powder, baking soda, and salt.
  4. Alternately add the dry ingredients and the milk/sour cream mixture to the butter mixture, starting and ending with the flour. Mix until just combined.
  5. Combine 65g flour, 100g brown sugar, and 2g cinnamon in a small bowl. Work cold butter into the mixture using a pastry cutter or forks until crumbly.
  6. Layer a portion of the batter in a prepared 9-inch square pan, add the apple mixture, top with the remaining batter, and sprinkle with the streusel.
  7. Bake for 35 minutes or until a toothpick comes out clean.
