Ingredients:

  • 1 lb lean ground beef
  • 2 tbsp taco seasoning
  • 1/3 cup water
  • 6 medium (approx. 6-inch) flour tortillas
  • 1 1/2 cups shredded Monterey Jack or Mexican blend cheese
  • 1 cup fresh pico de gallo
  • 1 tbsp vegetable oil

Instructions:

  1. Brown the ground beef in a large non-stick skillet over medium-high heat, breaking the meat into small crumbles until no longer pink and well-seared.
  2. Stir in the taco seasoning and water; simmer for 3-5 minutes until the liquid reduces to a thick glaze.
  3. Wipe the skillet clean and add a small amount of vegetable oil. Place a tortilla in the pan for 15 seconds to warm.
  4. Sprinkle shredded cheese on one half of the tortilla, then top with a scoop of seasoned beef and a spoonful of fresh pico de gallo.
  5. Fold the tortilla in half to create a semi-circle and press down firmly with a spatula.
  6. Grill for 1-2 minutes per side until the tortilla is golden-brown with charred spots and the cheese is completely molten.
