Ingredients:
- 1 lb lean ground beef
- 2 tbsp taco seasoning
- 1/3 cup water
- 6 medium (approx. 6-inch) flour tortillas
- 1 1/2 cups shredded Monterey Jack or Mexican blend cheese
- 1 cup fresh pico de gallo
- 1 tbsp vegetable oil
Instructions:
- Brown the ground beef in a large non-stick skillet over medium-high heat, breaking the meat into small crumbles until no longer pink and well-seared.
- Stir in the taco seasoning and water; simmer for 3-5 minutes until the liquid reduces to a thick glaze.
- Wipe the skillet clean and add a small amount of vegetable oil. Place a tortilla in the pan for 15 seconds to warm.
- Sprinkle shredded cheese on one half of the tortilla, then top with a scoop of seasoned beef and a spoonful of fresh pico de gallo.
- Fold the tortilla in half to create a semi-circle and press down firmly with a spatula.
- Grill for 1-2 minutes per side until the tortilla is golden-brown with charred spots and the cheese is completely molten.
