Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (2g) salt
  • 1 tbsp (8g) ground cinnamon
  • 3/4 cup (160g) packed dark brown sugar
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 2 cups (280g) grated zucchini
  • 1/2 cup (60g) powdered sugar
  • 2 tbsp (25g) melted unsalted butter
  • 1 tbsp (12g) dark brown sugar
  • 1 tbsp (15ml) whole milk

Instructions:

  1. Grate the zucchini using the large holes of a box grater. Measure out exactly 2 cups and lightly pat with a paper towel if it's dripping, but don't squeeze it dry.
  2. In a large bowl, whisk the dark brown sugar and eggs. Whisk until the mixture lightens in color and looks smooth.
  3. Slowly stream in the vegetable oil and vanilla extract. Keep whisking constantly until the batter is glossy.
  4. Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture.
  5. Use a rubber spatula to fold the ingredients together gently. Stop the moment no streaks of flour remain Note: Overmixing makes the bread tough.
  6. Gently fold the grated zucchini into the batter until it's evenly distributed.
  7. Pour the batter into a greased and parchment lined 9x5-inch loaf pan.
  8. Bake for 45 minutes until a toothpick in the center comes out clean.
  9. Whisk together the powdered sugar, melted butter, dark brown sugar, and milk for the glaze.
  10. Drizzle the glaze over the cooled Brown Sugar Zucchini Bread before slicing.
