Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (2g) salt
- 1 tbsp (8g) ground cinnamon
- 3/4 cup (160g) packed dark brown sugar
- 1/2 cup (120ml) vegetable oil
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 2 cups (280g) grated zucchini
- 1/2 cup (60g) powdered sugar
- 2 tbsp (25g) melted unsalted butter
- 1 tbsp (12g) dark brown sugar
- 1 tbsp (15ml) whole milk
Instructions:
- Grate the zucchini using the large holes of a box grater. Measure out exactly 2 cups and lightly pat with a paper towel if it's dripping, but don't squeeze it dry.
- In a large bowl, whisk the dark brown sugar and eggs. Whisk until the mixture lightens in color and looks smooth.
- Slowly stream in the vegetable oil and vanilla extract. Keep whisking constantly until the batter is glossy.
- Sift the flour, baking soda, salt, and cinnamon directly into the wet mixture.
- Use a rubber spatula to fold the ingredients together gently. Stop the moment no streaks of flour remain Note: Overmixing makes the bread tough.
- Gently fold the grated zucchini into the batter until it's evenly distributed.
- Pour the batter into a greased and parchment lined 9x5-inch loaf pan.
- Bake for 45 minutes until a toothpick in the center comes out clean.
- Whisk together the powdered sugar, melted butter, dark brown sugar, and milk for the glaze.
- Drizzle the glaze over the cooled Brown Sugar Zucchini Bread before slicing.
