Ingredients:

  • 1 cup neutral oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan thoroughly with butter or oil, or line it with parchment paper.
  2. Grate your zucchini using the large holes of a box grater. Do not squeeze out the water.
  3. In a large bowl, whisk together the oil, sugar, eggs, and vanilla until the mixture is smooth and pale.
  4. Stir in the grated zucchini using a spatula until evenly distributed.
  5. Whisk in the flour, baking soda, baking powder, salt, and cinnamon. Stir gently just until the white streaks of flour disappear; do not overmix.
  6. Fold in 3/4 cup of the chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top. Sprinkle the remaining 1/4 cup of chocolate chips over the surface.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  9. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
