Ingredients:
- 1.5 cups (180g) all-purpose flour
- 0.5 cup (45g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 1 cup (200g) granulated sugar
- 0.5 cup (120ml) neutral oil
- 2 large eggs
- 2 tsp (10ml) vanilla extract
- 2 cups (240g) grated zucchini, squeezed lightly
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until no large lumps remain.
- In a large bowl, beat the sugar, oil, eggs, and vanilla vigorously until the mixture looks pale and slightly thickened.
- Gently stir the grated zucchini into the wet mixture, ensuring it is evenly distributed.
- Pour the dry ingredients into the wet ingredients and fold with a rubber spatula just until the streaks of flour disappear; do not over-mix.
- Fold in the semi-sweet chocolate chips until evenly suspended in the batter.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
- Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
