Ingredients:

  • 1.5 cups (180g) all-purpose flour
  • 0.5 cup (45g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) salt
  • 1 cup (200g) granulated sugar
  • 0.5 cup (120ml) neutral oil
  • 2 large eggs
  • 2 tsp (10ml) vanilla extract
  • 2 cups (240g) grated zucchini, squeezed lightly
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt until no large lumps remain.
  3. In a large bowl, beat the sugar, oil, eggs, and vanilla vigorously until the mixture looks pale and slightly thickened.
  4. Gently stir the grated zucchini into the wet mixture, ensuring it is evenly distributed.
  5. Pour the dry ingredients into the wet ingredients and fold with a rubber spatula just until the streaks of flour disappear; do not over-mix.
  6. Fold in the semi-sweet chocolate chips until evenly suspended in the batter.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
  9. Allow the loaf to cool in the pan for 10 minutes before transferring to a wire rack.
