Ingredients:
- 3/4 cup (95g) all-purpose flour
- 1/2 cup (100g) packed light brown sugar
- 1 tbsp (8g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1/2 cup (113g) unsalted butter, cold and cubed
- 2 cups (250g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (240g) full-fat sour cream, room temperature
- 1/4 cup (60ml) whole milk, room temperature
- 1/4 cup (30g) all-purpose flour
- 1/4 cup (50g) packed light brown sugar
- 1 tbsp (8g) ground cinnamon
Instructions:
- In a medium bowl, whisk together the flour, brown sugar, cinnamon, and salt for the streusel.
- Add the cold, cubed butter to the streusel mixture. Use a pastry cutter or fork to work the butter in until the mixture resembles coarse crumbs with pea-sized lumps. Set aside in the fridge.
- Preheat oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper.
- Cream together the softened butter and granulated sugar on medium-high speed until pale and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- In a small bowl, whisk together the sour cream and milk until smooth.
- Alternately add the dry ingredients and the sour cream/milk mixture to the butter mixture, beginning and ending with the flour. Mix on low until just combined.
- Pour half of the batter into the prepared pan and smooth the top.
- Mix the cinnamon swirl ingredients (flour, brown sugar, cinnamon) in a small bowl and sprinkle evenly over the first layer of batter.
- Pour the remaining batter over the cinnamon layer and spread gently.
- Generously sprinkle the chilled streusel over the top, pressing very lightly to adhere.
- Bake for 35–40 minutes until a toothpick inserted in the center comes out clean.
