Ingredients:
- 1.5 lbs fresh broccoli florets, cut into bite-sized pieces
- 1/2 cup red onion, finely diced
- 1/2 cup sunflower seeds, toasted
- 8 oz thick-cut bacon, fried until crisp and chopped
- 1/2 cup dried cranberries
- 1/2 cup sharp cheddar cheese, cubed small
- 2/3 cup mayonnaise
- 2 tbsp apple cider vinegar
- 3 tbsp granulated sugar
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Carefully chop the broccoli into small, uniform florets and finely dice the red onion.
- In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until the sugar is dissolved and the mixture is smooth.
- Combine the broccoli, onion, bacon, cranberries, cheese, and sunflower seeds in a large mixing bowl.
- Pour the dressing over the ingredients and toss thoroughly until every floret is evenly coated.
- Cover and refrigerate for at least one hour before serving to allow flavors to meld.
