Ingredients:

  • 1.5 lbs fresh broccoli florets, cut into bite-sized pieces
  • 1/2 cup red onion, finely diced
  • 1/2 cup sunflower seeds, toasted
  • 8 oz thick-cut bacon, fried until crisp and chopped
  • 1/2 cup dried cranberries
  • 1/2 cup sharp cheddar cheese, cubed small
  • 2/3 cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 3 tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Carefully chop the broccoli into small, uniform florets and finely dice the red onion.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until the sugar is dissolved and the mixture is smooth.
  3. Combine the broccoli, onion, bacon, cranberries, cheese, and sunflower seeds in a large mixing bowl.
  4. Pour the dressing over the ingredients and toss thoroughly until every floret is evenly coated.
  5. Cover and refrigerate for at least one hour before serving to allow flavors to meld.
