Ingredients:

  • 1/2 cup (115g) unsalted butter, softened
  • 3/4 cup (150g) coconut sugar
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) pure vanilla extract
  • 1 cup (100g) unsweetened Dutch-process cocoa powder
  • 1 1/4 cups (155g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) sea salt
  • 1 cup (170g) 70% dark chocolate bar, chopped into irregular chunks
  • 1/2 cup (85g) semi-sweet chocolate chips

Instructions:

  1. Beat the softened butter and coconut sugar until the mixture is pale and fluffy.
  2. Add the egg and vanilla, beating for another 2 minutes until the batter looks glossy.
  3. Sift in the cocoa powder, flour, baking soda, and salt. Fold gently with a spatula until just combined, avoiding overmixing.
  4. Stir in the chopped dark chocolate and chocolate chips by hand.
  5. Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
  6. Bake at 350°F (175°C) for 10–12 minutes. Remove when the edges are set but the center still looks slightly underbaked.
