Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) coconut sugar
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) pure vanilla extract
- 1 cup (100g) unsweetened Dutch-process cocoa powder
- 1 1/4 cups (155g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) sea salt
- 1 cup (170g) 70% dark chocolate bar, chopped into irregular chunks
- 1/2 cup (85g) semi-sweet chocolate chips
Instructions:
- Beat the softened butter and coconut sugar until the mixture is pale and fluffy.
- Add the egg and vanilla, beating for another 2 minutes until the batter looks glossy.
- Sift in the cocoa powder, flour, baking soda, and salt. Fold gently with a spatula until just combined, avoiding overmixing.
- Stir in the chopped dark chocolate and chocolate chips by hand.
- Scoop rounded tablespoons of dough onto parchment-lined baking sheets.
- Bake at 350°F (175°C) for 10–12 minutes. Remove when the edges are set but the center still looks slightly underbaked.
