Ingredients:
- 1 cup (125g) all-purpose flour
- 1/2 cup (100g) light brown sugar, packed
- 1 tbsp (8g) ground cinnamon
- 1/4 tsp (1.5g) sea salt
- 1/2 cup (113g) unsalted butter, melted
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (245g) plain Greek yogurt, room temperature
- 1/2 cup (120ml) neutral oil
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- In a medium bowl, whisk together 1 cup flour, brown sugar, cinnamon, and 1/4 tsp salt. Stir in melted butter with a fork until a chunky, pebble-like texture forms. Divide the mixture into two equal portions.
- In a large bowl, whisk together 2 cups flour, granulated sugar, baking powder, and 1/2 tsp salt.
- In a separate bowl, whisk Greek yogurt, oil, eggs, and vanilla until smooth.
- Gently fold the wet ingredients into the dry ingredients using a spatula, stirring only until the last streaks of flour disappear.
- Sprinkle the first portion of the crumb mixture evenly across the bottom of the prepared pan, pressing down slightly.
- Pour the yogurt batter over the crumbs, smoothing the top, and scatter the remaining crumb mixture over the batter.
- Bake for 45-55 minutes until the streusel is deep golden-brown and the cake pulls away from the edges. Allow to cool in the pan for 30 minutes before removing.
