Ingredients:
- ½ cup (65g) all-purpose flour
- ½ cup (100g) brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 4 tbsp (56g) cold unsalted butter, cubed
- 1 ½ cups (190g) all-purpose flour
- ¾ cup (150g) granulated sugar
- 2 tsp (10g) baking powder
- ½ tsp (3g) salt
- ½ cup (115g) unsalted butter, softened
- 1 large (50g) egg, room temperature
- ½ cup (120g) sour cream
- 1 tsp (5ml) vanilla extract
- 2 tbsp (16g) melted butter
- 3 tbsp (35g) brown sugar
- 1 tsp (2g) ground cinnamon
Instructions:
- Preheat oven to 350°F (175°C). Grease an 8x8 inch pan and line with parchment paper, leaving an overhang on the sides.
- Prepare the cinnamon streusel by combining flour, brown sugar, and cinnamon in a small bowl. Rub in the cold cubed butter using a fork or fingers until pea-sized clumps form.
- Create the cinnamon ribbon by mixing melted butter, brown sugar, and cinnamon into a thick paste in a separate small bowl.
- In a large bowl, whisk together the cake batter dry ingredients: flour, granulated sugar, baking powder, and salt.
- Stir in the softened butter, egg, sour cream, and vanilla extract. Mix until just combined to avoid over-developing gluten.
- Spread half of the cake batter into the prepared pan. Spread the cinnamon ribbon paste over the center, leaving a small border.
- Top with the remaining batter and sprinkle the cinnamon streusel evenly across the surface.
- Bake for 30-35 minutes until a toothpick inserted in the center comes out clean and the top is deep golden brown.
- Cool the cake in the pan for at least 20 minutes before lifting and slicing.
