Ingredients:
- 2 cups (300g) zucchini, roughly chopped
- 1/2 cup (115g) vegetable oil
- 2 large (100g) eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 3/4 cup (150g) brown sugar, packed
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1/2 cup (60g) chopped walnuts
Instructions:
- Place the chopped zucchini into the food processor. Pulse 5–8 times until the zucchini is finely minced into a coarse purée.
- Add the brown sugar, oil, eggs, and vanilla to the processor. Process for another 10–15 seconds until the mixture is frothy and the sugar has mostly dissolved.
- Sift the flour, baking soda, salt, and cinnamon directly into the processor bowl. Pulse the machine only 3–5 times, stopping immediately once no white streaks of flour remain.
- Fold in the optional chopped walnuts or chocolate chips by hand using a rubber spatula.
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
- Pour the batter into the pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire cooling rack.
