Ingredients:

  • 2 cups (300g) zucchini, roughly chopped
  • 1/2 cup (115g) vegetable oil
  • 2 large (100g) eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 3/4 cup (150g) brown sugar, packed
  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1/2 tsp (3g) salt
  • 1 tbsp (6g) ground cinnamon
  • 1/2 cup (60g) chopped walnuts

Instructions:

  1. Place the chopped zucchini into the food processor. Pulse 5–8 times until the zucchini is finely minced into a coarse purée.
  2. Add the brown sugar, oil, eggs, and vanilla to the processor. Process for another 10–15 seconds until the mixture is frothy and the sugar has mostly dissolved.
  3. Sift the flour, baking soda, salt, and cinnamon directly into the processor bowl. Pulse the machine only 3–5 times, stopping immediately once no white streaks of flour remain.
  4. Fold in the optional chopped walnuts or chocolate chips by hand using a rubber spatula.
  5. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line it with parchment paper.
  6. Pour the batter into the pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire cooling rack.
