Ingredients:

  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar, packed
  • 1 large egg (50g), room temperature
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (45g) unsweetened dark cocoa powder
  • 1 cup (125g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) sea salt
  • 1 cup (170g) 70% dark chocolate chips

Instructions:

  1. Beat the softened butter and brown sugar together until the mixture is smooth and pale.
  2. Incorporate the egg and vanilla extract, whisking until the batter is glossy and well-combined.
  3. Sift the cocoa powder, flour, baking soda, and salt directly into the wet mixture.
  4. Fold the ingredients gently using a spatula; stop the moment no streaks of flour remain to avoid overworking the gluten.
  5. Stir in the dark chocolate chips by hand.
  6. Scoop rounded tablespoons of dough onto a parchment-lined sheet, spacing them 2 inches apart.
  7. Bake at 350°F (175°C) for 9–11 minutes. Remove when edges are set but centers still look slightly soft.
