Ingredients:
- 3 cups (450g) cooked turkey breast, diced into ½ inch cubes
- ½ cup (115g) mayonnaise
- 1 tbsp (15g) Dijon mustard
- 1 tbsp (15ml) fresh lemon juice
- ¼ tsp (1.5g) salt
- ¼ tsp (1g) cracked black pepper
- ½ cup (60g) celery, finely diced
- ¼ cup (35g) red onion, minced
- ⅓ cup (50g) dried cranberries
- ⅓ cup (40g) diced honeycrisp apple
- ¼ cup (30g) toasted pecans, chopped
- 2 tbsp (8g) fresh parsley, chopped
Instructions:
- Dice the turkey, celery, red onion, and apple into uniform, small pieces. Pat the celery dry with a paper towel to prevent excess moisture from thinning the dressing.
- In the bottom of a large mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until the mixture is smooth and velvety.
- Add the diced turkey, celery, onion, apples, cranberries, and pecans to the bowl. Using a silicone spatula, gently fold the mixture together until the turkey is evenly coated in the dressing. Stir in the fresh parsley last to keep the leaves vibrant and green.
