Ingredients:
- 1.5 lbs lean ground beef (90/10)
- 0.5 cup yellow onion, finely diced
- 3 cloves garlic, minced
- 1 medium bell pepper, diced
- 2 tbsp sugar-free taco seasoning
- 4 oz full-fat cream cheese, softened
- 0.5 cup chunky salsa (no sugar added)
- 0.25 cup beef bone broth
- 12 oz cauliflower rice
- 4 oz canned diced green chiles
- 1.5 cups sharp cheddar cheese, shredded
- 0.25 cup fresh cilantro, chopped
Instructions:
- Heat a large skillet over medium-high heat. Add the ground beef and sear undisturbed for 3 minutes to develop a brown crust.
- Add the diced onions and bell peppers to the skillet. Sauté until onions are translucent and beef is fully cooked. Drain excess rendered fat.
- Reduce heat to medium. Stir in minced garlic and taco seasoning, toasting for 60 seconds.
- Add softened cream cheese, salsa, and beef bone broth. Stir vigorously until the cream cheese melts into a smooth sauce.
- Integrate the cauliflower rice and green chiles into the beef mixture. Transfer the mixture to a 9x13 inch casserole dish.
- Top with shredded cheddar cheese and bake or broil until the cheese is golden and bubbly. Garnish with fresh cilantro before serving.
