Ingredients:

  • 1.5 lbs lean ground beef (90/10)
  • 0.5 cup yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 tbsp sugar-free taco seasoning
  • 4 oz full-fat cream cheese, softened
  • 0.5 cup chunky salsa (no sugar added)
  • 0.25 cup beef bone broth
  • 12 oz cauliflower rice
  • 4 oz canned diced green chiles
  • 1.5 cups sharp cheddar cheese, shredded
  • 0.25 cup fresh cilantro, chopped

Instructions:

  1. Heat a large skillet over medium-high heat. Add the ground beef and sear undisturbed for 3 minutes to develop a brown crust.
  2. Add the diced onions and bell peppers to the skillet. Sauté until onions are translucent and beef is fully cooked. Drain excess rendered fat.
  3. Reduce heat to medium. Stir in minced garlic and taco seasoning, toasting for 60 seconds.
  4. Add softened cream cheese, salsa, and beef bone broth. Stir vigorously until the cream cheese melts into a smooth sauce.
  5. Integrate the cauliflower rice and green chiles into the beef mixture. Transfer the mixture to a 9x13 inch casserole dish.
  6. Top with shredded cheddar cheese and bake or broil until the cheese is golden and bubbly. Garnish with fresh cilantro before serving.
