Ingredients:

  • 4 cups corn (600g)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 cup crumbled Cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tsp Tajin seasoning
  • 2 tbsp finely diced red onion

Instructions:

  1. Heat the olive oil and butter in a cast iron skillet over medium-high heat. Add the smoked paprika and toast for 30 seconds to develop depth.
  2. Add the corn in a single layer and let it sit undisturbed for 2-3 minutes until the kernels turn mahogany-brown.
  3. Stir the corn and cook for another 3-5 minutes until it smells nutty and toasted.
  4. In a small bowl, whisk together the mayonnaise, Greek yogurt, lime juice, lime zest, and garlic powder until smooth.
  5. Transfer the warm corn to a mixing bowl and fold in the prepared dressing.
  6. Stir in the crumbled Cotija cheese, diced red onion, and fresh cilantro.
  7. Sprinkle with Tajin seasoning just before serving.
