Ingredients:
- 2 cups (250g) all-purpose flour
- 1/2 cup (100g) honey
- 1/4 cup (50g) granulated cane sugar
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) buttermilk
- 2 large eggs (100g)
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1 tsp (5ml) vanilla extract
- 1/2 cup (60g) rolled oats
- 1/2 cup (115g) chopped walnuts
- 1/4 cup (50g) brown sugar
- 1 tsp (2g) ground cinnamon
- 2 tbsp (28g) melted butter
Instructions:
- Grease a 9x13 inch baking pan or Bundt pan and line the bottom with parchment paper.
- In a large bowl, whisk together flour, cane sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then stir in the honey, melted butter, buttermilk, and vanilla until smooth.
- Fold the wet ingredients into the dry until just combined, ensuring not to overmix.
- In a small bowl, mix the oats, nuts, brown sugar, cinnamon, and melted butter, then sprinkle evenly over the raw batter.
- Cover the pan tightly with foil or plastic wrap and refrigerate overnight for at least 8 hours.
- Preheat the oven to 350°F (175°C).
- Remove the cake from the refrigerator and bake for 35 minutes.
