Ingredients:
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1 cup (100g) pecans, finely chopped
- 1 tbsp (8g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (240g) sour cream, full-fat
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) salt
Instructions:
- In a medium bowl, combine the softened butter, brown sugar, cinnamon, and salt.
- Stir in the chopped pecans until the mixture forms a coarse, sandy crumble. Set aside.
- Beat the softened butter and granulated sugar on medium-high until pale and fluffy (about 3 minutes).
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Lower the mixer speed and blend in the sour cream until just combined.
- Gently fold in the flour, baking powder, baking soda, and salt using a spatula. Stop the moment no flour streaks remain to avoid overworking the gluten.
- Grease your 9x9 inch pan and line it with parchment paper. Pour half of the batter into the pan and smooth it with a spatula.
- Sprinkle half of the pecan streusel evenly over the batter.
- Spread the remaining batter over the streusel, then top with the remaining streusel, pressing lightly.
- Bake at 350°F (175°C) for 40–45 minutes. The cake is done when a toothpick inserted into the center comes out clean.
