Ingredients:

  • 1 cup (225g) unsalted butter, softened to room temperature
  • 1 cup (200g) granulated white sugar
  • 1 large (50g) egg
  • 2 tsp (10ml) pure vanilla extract
  • 2 ½ cups (310g) all-purpose flour
  • 1 tsp (5g) baking powder
  • ½ tsp (3g) salt
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) milk
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Cream the softened butter and granulated sugar in a large bowl using a medium speed until the mixture is smooth and combined.
  2. Add the egg and vanilla extract, beating for only 30 seconds to incorporate.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients on low speed, mixing just until the flour streaks disappear.
  5. Preheat the oven to 350°F (175°C).
  6. Roll the dough on a lightly floured surface to a ¼ inch thickness.
  7. Cut shapes with cookie cutters and place them 1 inch apart on parchment-lined baking sheets.
  8. Bake for 8–10 minutes until the edges are set and the centers look matte.
  9. For the optional glaze, whisk together powdered sugar, milk, and vanilla extract until smooth, then apply to cooled cookies.
