Ingredients:
- 1/2 cup (100g) unsalted butter, cold and cubed
- 3/4 cup (150g) light brown sugar, packed
- 1 cup (125g) all-purpose flour
- 1/2 cup (50g) almond meal
- 1 tsp (5g) ground cinnamon
- 1/2 tsp (2.5g) salt
- 1/2 tsp (2.5ml) almond extract
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (2.5ml) almond extract
- 1 cup (240g) full-fat sour cream
- 2 1/2 cups (310g) all-purpose flour
- 1 tbsp (12g) baking powder
- 1/2 tsp (3g) salt
- 1 1/2 cups (180g) fresh raspberries
- 2 tbsp (16g) granulated sugar
Instructions:
- In a medium bowl, combine the flour, almond meal, brown sugar, cinnamon, and salt. Cut in the cold cubed butter using a pastry cutter or fingertips until the mixture resembles coarse sand with pea-sized lumps. Stir in the almond extract and refrigerate.
- Cream together the softened butter and granulated sugar until pale and fluffy. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
- In a separate bowl, whisk the flour, baking powder, and salt. Gradually add the flour mixture to the butter mixture, alternating with the sour cream, stirring just until combined.
- Grease a 9x9 inch baking pan and line with parchment paper. Spread half of the cake batter into the bottom of the pan.
- Toss the raspberries with 2 tablespoons of granulated sugar and scatter them evenly over the bottom batter layer.
- Top with the remaining batter, smoothing gently with a spatula, and sprinkle the chilled almond crumble generously over the top.
- Bake at 350°F (175°C) for 35-45 minutes until a toothpick inserted into the center comes out clean.
