Ingredients:

  • 4 cups (950g) seedless watermelon, cut into 3x1/2 inch batons
  • 2 tbsp (30ml) melted coconut oil
  • 1 tbsp (8g) granulated sugar
  • ½ tsp (3g) sea salt
  • ¼ tsp (1g) cinnamon
  • 1 cup (245g) plain Greek yogurt
  • 2 tbsp (42g) honey
  • 1 tsp (5ml) vanilla extract
  • 1 tbsp (15ml) fresh lime juice

Instructions:

  1. Using a crinkle cutter, slice the watermelon into uniform fries (roughly 3 inches long and 1/2 inch thick), removing as much of the rind as possible.
  2. In a large bowl, toss the watermelon batons with melted coconut oil, granulated sugar, salt, and cinnamon until each piece is thoroughly coated.
  3. Spread the fries in a single layer on a parchment-lined baking sheet. Roast at 425°F (218°C) for 12–15 minutes until the edges are mahogany-colored and slightly shrunk.
  4. While the fries roast, whisk together the Greek yogurt, honey, vanilla extract, and lime juice until velvety. Chill in the refrigerator until serving.
