Ingredients:

  • 4 cups (600g) shredded rotisserie chicken
  • 1/2 cup (120g) plain Greek yogurt
  • 1/4 cup (60g) mayonnaise
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5g) Dijon mustard
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) cracked black pepper
  • 3/4 cup (100g) celery, finely diced
  • 1/4 cup (40g) red onion, minced
  • 2 tbsp (8g) fresh parsley, chopped
  • 1/2 cup (75g) red grapes, halved

Instructions:

  1. Remove the meat from the rotisserie chicken while still slightly warm for easier shredding. Use two forks to pull the meat into bite-sized shards, ensuring a mix of white and dark meat.
  2. In a small bowl, vigorously whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and pepper until the mixture is velvety and completely emulsified.
  3. Combine the shredded chicken, diced celery, and minced onion in a large mixing bowl.
  4. Pour the dressing over the chicken mixture and fold gently with a spatula until every piece of chicken is evenly coated.
  5. Stir in the chopped parsley and halved red grapes last to avoid bruising the fruit.
