Ingredients:
- ½ cup (115g) unsalted butter, softened
- ⅓ cup (110g) honey
- 1 large (50g) egg, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (125g) all-purpose flour
- ½ tsp (3g) baking soda
- ¼ tsp (1.5g) salt
- 1 ½ cups (130g) rolled oats
- ½ cup (85g) dark chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and honey together until pale and smooth, then whisk in the egg and vanilla extract.
- Stir in the flour, baking soda, and salt. Once combined, fold in the rolled oats and chocolate chips until a thick dough forms.
- Roll the dough into 1-inch balls and place them 2 inches apart on the baking sheet.
- Bake for 10-12 minutes until the edges are pale gold and the centers are no longer shiny.
