Ingredients:

  • ½ cup (115g) unsalted butter, softened
  • ⅓ cup (110g) honey
  • 1 large (50g) egg, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 cup (125g) all-purpose flour
  • ½ tsp (3g) baking soda
  • ¼ tsp (1.5g) salt
  • 1 ½ cups (130g) rolled oats
  • ½ cup (85g) dark chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter and honey together until pale and smooth, then whisk in the egg and vanilla extract.
  3. Stir in the flour, baking soda, and salt. Once combined, fold in the rolled oats and chocolate chips until a thick dough forms.
  4. Roll the dough into 1-inch balls and place them 2 inches apart on the baking sheet.
  5. Bake for 10-12 minutes until the edges are pale gold and the centers are no longer shiny.
