Ingredients:

  • 1/2 cup (115g) unsalted butter, melted and cooled slightly
  • 1/2 cup (100g) coconut sugar
  • 1/4 cup (60ml) pure maple syrup
  • 1/2 cup (128g) creamy natural peanut butter
  • 1 large egg
  • 1 tsp (5ml) pure vanilla extract
  • 1 1/4 cups (150g) white whole wheat flour
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) sea salt
  • 3/4 cup (130g) dark chocolate chunks

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together the melted butter, coconut sugar, and maple syrup.
  2. Stir in the peanut butter, egg, and vanilla until the mixture is glossy and completely smooth.
  3. Fold in the white whole wheat flour, baking soda, and salt using a spatula. Mix only until no streaks of flour remain.
  4. Gently fold in the dark chocolate chunks.
  5. Scoop rounded tablespoons of dough onto a prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 8 minutes until the edges are barely golden and the centers still look slightly soft. Remove immediately and let them firm up on the pan for 5 minutes.
