Ingredients:
- 1/2 cup (115g) unsalted butter, melted and cooled slightly
- 1/2 cup (100g) coconut sugar
- 1/4 cup (60ml) pure maple syrup
- 1/2 cup (128g) creamy natural peanut butter
- 1 large egg
- 1 tsp (5ml) pure vanilla extract
- 1 1/4 cups (150g) white whole wheat flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) sea salt
- 3/4 cup (130g) dark chocolate chunks
Instructions:
- Preheat your oven to 350°F (175°C). In a large bowl, whisk together the melted butter, coconut sugar, and maple syrup.
- Stir in the peanut butter, egg, and vanilla until the mixture is glossy and completely smooth.
- Fold in the white whole wheat flour, baking soda, and salt using a spatula. Mix only until no streaks of flour remain.
- Gently fold in the dark chocolate chunks.
- Scoop rounded tablespoons of dough onto a prepared baking sheet, spacing them 2 inches apart.
- Bake for 8 minutes until the edges are barely golden and the centers still look slightly soft. Remove immediately and let them firm up on the pan for 5 minutes.
