Ingredients:
- ½ cup (115g) unsalted butter, melted
- 1 cup (200g) light brown sugar, packed
- 1 ½ cups (190g) all-purpose flour
- 2 tbsp (16g) ground cinnamon
- ¼ tsp (1.5g) salt
- 3 cups (375g) all-purpose flour
- 1 tbsp (12g) baking powder
- ½ tsp (3g) salt
- 1 cup (225g) unsalted butter, softened to room temperature
- 1 ½ cups (300g) granulated sugar
- 3 large eggs, room temperature
- 2 tsp (10ml) pure vanilla extract
- 1 cup (240g) full-fat sour cream, room temperature
Instructions:
- Preheat oven to 350°F (175°C). Generously grease a 10 inch Bundt pan with butter or cooking spray, then dust with flour, tapping out the excess.
- In a small bowl, stir together melted butter, brown sugar, flour, cinnamon, and salt until coarse, sandy crumbs form. Set aside.
- In a large bowl, beat the softened butter and granulated sugar on medium high until pale and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- Sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, starting and ending with the flour.
- Mix only until just combined. Do not overmix to avoid making the cake tough.
- Pour half the batter into the pan, sprinkle half the cinnamon streusel over it, then add the remaining batter and top with the rest of the crumbs.
- Bake 55 mins until a toothpick inserted in the center comes out clean.
