Ingredients:

  • 1 cup (225g) unsalted butter, room temperature
  • 3/4 cup (150g) granulated sugar
  • 2 tsp (10ml) pure vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/2 tsp (3g) salt
  • 1/4 cup (50g) granulated sugar

Instructions:

  1. Beat the room temperature butter and 3/4 cup sugar on medium-high speed for 3–5 minutes until the mixture is pale, fluffy, and has nearly doubled in volume.
  2. Stir in the vanilla extract until fully incorporated.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Turn the mixer to low and gradually add the dry ingredients to the butter mixture. Mix only until a soft dough forms; stop immediately once the flour streaks disappear.
  5. Preheat your oven to 350°F (175°C).
  6. Scoop 1-tablespoon portions of dough and roll them into smooth balls.
  7. Roll each ball in the 1/4 cup of topping sugar until evenly coated.
  8. Place the balls on a parchment-lined baking sheet 2 inches apart.
  9. Bake for 10–12 minutes, or until the edges are just barely golden.
  10. Let the cookies cool on the pan for 5 minutes before moving them to a wire rack.
