Ingredients:
- 2 thick slices of Sourdough or Ciabatta bread
- 1 tbsp Unsalted butter, room temperature
- 5 oz leftover roasted turkey (mix of breast and thigh)
- 2 slices Sharp White Cheddar or Havarti cheese
- 1/4 cup leftover stuffing
- 2 tbsp whole berry cranberry sauce
- 1 tbsp cream cheese
- 1 handful fresh arugula
Instructions:
- Spread 1 tbsp of room temperature butter generously on one side of each bread slice. Note: Edge to edge coverage ensures no dry spots.
- Spread 1 tbsp of cream cheese on the unbuttered side of the bottom slice. Note: This is your moisture barrier for the cranberry sauce.
- Place the bottom slice butter side down in a cold heavy bottomed skillet. until you hear no sizzle yet.
- Layer 2 slices of Sharp White Cheddar, then 5 oz of leftover roasted turkey, and top with 1/4 cup of stuffing. until the pile is stable.
- Turn heat to medium low and cover the pan with a lid for 2 minutes. Note: This melts the cheese and steams the turkey through.
- Remove the lid and spread 2 tbsp of whole berry cranberry sauce onto the turkey or the top slice. until the sauce is evenly distributed.
- Place a handful of fresh arugula on top and add the second bread slice, butter side up.
- Flip the sandwich carefully and press down with a spatula for 60 seconds. until the bread is golden and crackling.
- Remove from heat and let it sit for 1 minute. Note: This prevents the slide when cutting.
- Slice diagonally and serve immediately while the cheese is still stretchy.
