Ingredients:

  • 2 thick slices of Sourdough or Ciabatta bread
  • 1 tbsp Unsalted butter, room temperature
  • 5 oz leftover roasted turkey (mix of breast and thigh)
  • 2 slices Sharp White Cheddar or Havarti cheese
  • 1/4 cup leftover stuffing
  • 2 tbsp whole berry cranberry sauce
  • 1 tbsp cream cheese
  • 1 handful fresh arugula

Instructions:

  1. Spread 1 tbsp of room temperature butter generously on one side of each bread slice. Note: Edge to edge coverage ensures no dry spots.
  2. Spread 1 tbsp of cream cheese on the unbuttered side of the bottom slice. Note: This is your moisture barrier for the cranberry sauce.
  3. Place the bottom slice butter side down in a cold heavy bottomed skillet. until you hear no sizzle yet.
  4. Layer 2 slices of Sharp White Cheddar, then 5 oz of leftover roasted turkey, and top with 1/4 cup of stuffing. until the pile is stable.
  5. Turn heat to medium low and cover the pan with a lid for 2 minutes. Note: This melts the cheese and steams the turkey through.
  6. Remove the lid and spread 2 tbsp of whole berry cranberry sauce onto the turkey or the top slice. until the sauce is evenly distributed.
  7. Place a handful of fresh arugula on top and add the second bread slice, butter side up.
  8. Flip the sandwich carefully and press down with a spatula for 60 seconds. until the bread is golden and crackling.
  9. Remove from heat and let it sit for 1 minute. Note: This prevents the slide when cutting.
  10. Slice diagonally and serve immediately while the cheese is still stretchy.
