Ingredients:

  • 1 ¼ cups (150g) all-purpose flour
  • ½ cup (45g) Dutch-processed cocoa powder
  • 1 tsp (5g) baking soda
  • ¼ tsp (1.5g) salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) packed brown sugar
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips
  • ½ cup (85g) dark chocolate chunks

Instructions:

  1. Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter and brown sugar until the mixture looks pale and fluffy. Beat in the egg and vanilla extract until fully emulsified.
  2. Sift the flour, cocoa powder, baking soda, and salt directly into the wet ingredients. Stir using a spatula until just combined—stop the moment no streaks of flour remain. Fold in the semi-sweet chips and dark chocolate chunks.
  3. Scoop rounded tablespoons of dough onto parchment-lined sheets. Bake for 9–11 minutes. Remove the cookies when the edges are set and matte, but the centers still look slightly soft and under-baked.
