Ingredients:
- 3 lb seedless watermelon, chilled
- 1 tbsp fresh lime juice
- 1 cup Plain Greek Yogurt (0% fat)
- 1 tbsp honey
- 1 tsp pure vanilla extract
- 1 tbsp fresh lemon juice
- 1/2 cup fresh raspberries, mashed
Instructions:
- Remove the rind from the watermelon. Using the crinkle cutter, slice the flesh into 1/2-inch thick batons, roughly 3-4 inches long. Arrange them on a chilled platter and lightly drizzle with lime juice.
- In a mixing bowl, combine the Greek yogurt, honey, vanilla, and lemon juice. Whisk vigorously until the texture is velvety and smooth. Gently fold in mashed berries if using.
- Place the platter of fries and the bowl of dip in the refrigerator for 15 minutes to firm up the fruit and meld the flavors. Serve immediately while ice-cold.
