Ingredients:

  • 3 lb seedless watermelon, chilled
  • 1 tbsp fresh lime juice
  • 1 cup Plain Greek Yogurt (0% fat)
  • 1 tbsp honey
  • 1 tsp pure vanilla extract
  • 1 tbsp fresh lemon juice
  • 1/2 cup fresh raspberries, mashed

Instructions:

  1. Remove the rind from the watermelon. Using the crinkle cutter, slice the flesh into 1/2-inch thick batons, roughly 3-4 inches long. Arrange them on a chilled platter and lightly drizzle with lime juice.
  2. In a mixing bowl, combine the Greek yogurt, honey, vanilla, and lemon juice. Whisk vigorously until the texture is velvety and smooth. Gently fold in mashed berries if using.
  3. Place the platter of fries and the bowl of dip in the refrigerator for 15 minutes to firm up the fruit and meld the flavors. Serve immediately while ice-cold.
