Ingredients:
- 1.5 cups (150g) grated zucchini
- 0.5 cup (115g) melted unsalted butter
- 0.75 cup (150g) granulated sugar
- 1 large egg
- 1 tsp (5ml) pure vanilla extract
- 1.75 cups (220g) all-purpose flour
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) baking powder
- 0.5 tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 425°F (218°C) and line a 12-cup muffin tin with paper liners or grease them thoroughly.
- Grate zucchini using the large holes of a box grater, leaving the skin on.
- In a medium bowl, whisk together the melted butter, sugar, egg, and vanilla until smooth, then stir in the grated zucchini.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gently pour the dry ingredients into the wet ingredients and fold with a spatula until just combined; stop while a few streaks of flour remain.
- Fold in the chocolate chips gently.
- Spoon the batter evenly into the 12 muffin cups, filling them nearly to the top.
- Bake at 425°F (218°C) for 5 minutes. Without opening the oven door, reduce the heat to 350°F (175°C) and bake for another 13-15 minutes.
- Test the center with a toothpick; it should come out clean or with a few moist crumbs.
