Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) granulated white sugar
  • 1 large egg
  • 2 tsp (10ml) pure vanilla extract
  • 3 cups (375g) all-purpose flour
  • 1 tsp (5g) baking powder
  • ½ tsp (3g) salt
  • 1 cup (120g) powdered sugar
  • 2 tbsp (30ml) milk
  • ½ tsp (2.5ml) vanilla extract

Instructions:

  1. Beat the softened butter and granulated sugar on medium-high speed until pale and fluffy, about 2-3 minutes.
  2. Incorporate the egg and vanilla extract, beating until the batter is velvety and completely smooth.
  3. Whisk the flour, baking powder, and salt in a separate bowl.
  4. Turn the mixer to low and gradually add the flour mixture, mixing only until white streaks disappear.
  5. Wrap the dough tightly in plastic wrap, flatten into a disc, and refrigerate for 1 hour.
  6. Preheat oven to 350°F (175°C). Roll the chilled dough to 1/4 inch thickness on a floured surface.
  7. Press cookie cutters into the dough and transfer shapes to a lined baking sheet.
  8. Bake for 8-10 minutes until the edges are barely golden-brown.
  9. Prepare the optional glaze by mixing powdered sugar, milk, and vanilla extract until smooth, then apply to cooled cookies.
