Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) granulated white sugar
- 1 large egg
- 2 tsp (10ml) pure vanilla extract
- 3 cups (375g) all-purpose flour
- 1 tsp (5g) baking powder
- ½ tsp (3g) salt
- 1 cup (120g) powdered sugar
- 2 tbsp (30ml) milk
- ½ tsp (2.5ml) vanilla extract
Instructions:
- Beat the softened butter and granulated sugar on medium-high speed until pale and fluffy, about 2-3 minutes.
- Incorporate the egg and vanilla extract, beating until the batter is velvety and completely smooth.
- Whisk the flour, baking powder, and salt in a separate bowl.
- Turn the mixer to low and gradually add the flour mixture, mixing only until white streaks disappear.
- Wrap the dough tightly in plastic wrap, flatten into a disc, and refrigerate for 1 hour.
- Preheat oven to 350°F (175°C). Roll the chilled dough to 1/4 inch thickness on a floured surface.
- Press cookie cutters into the dough and transfer shapes to a lined baking sheet.
- Bake for 8-10 minutes until the edges are barely golden-brown.
- Prepare the optional glaze by mixing powdered sugar, milk, and vanilla extract until smooth, then apply to cooled cookies.
