- 1.5 cups (190g) self-raising flour
- 0.75 cup (150g) caster sugar
- 0.5 cup (115g) unsalted butter, softened
- 0.25 cup (60ml) neutral oil
- 3 medium eggs, room temperature
- 2 tbsp (15g) instant coffee granules
- 1 tbsp (15ml) hot water
- 1 tsp (5ml) vanilla extract
- 0.75 cup (90g) walnuts, finely chopped
- 0.5 tsp (3g) baking powder
- 0.5 cup (115g) unsalted butter, softened
- 1.5 cups (180g) powdered sugar, sifted
- 1 tbsp (6g) instant coffee
- 1 tsp (5ml) hot water
- 1 tbsp (15ml) heavy cream
- 2 tbsp (15g) crushed walnuts
Instructions:
- Preheat the oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
- Using an electric mixer, cream together the softened butter, neutral oil, and caster sugar until the mixture is pale and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated to prevent the batter from curdling.
- Sift the self-raising flour and baking powder directly into the wet ingredients.
- Gently fold in the dissolved coffee (coffee granules mixed with hot water) and the vanilla extract.
- Using a rubber spatula, fold in the finely chopped walnuts until just combined to avoid over-working the gluten.
- Divide the batter evenly between the prepared pans and bake for 30 minutes or until a toothpick comes out clean.
- Prepare the coffee buttercream by beating together the softened butter and powdered sugar, then stirring in the dissolved coffee and heavy cream.
- Frost the cooled cake layers with the buttercream and garnish with crushed walnuts.
